Easy Summertime BBQ Meal + Easy Slowcooker BBQ Ribs Recipe

0

Finally It is summertime and the outdoor deck (or in our case, our building’s rooftop) is ready! If you have a slowcooker and a grill, I have a beautiful, colorful summertime BBQ meal for you and your family. Believe me, your family will eat everything up and be extremely impressed by the yummy bounty. I also love that you can prep and cook up all the vegetables and side dishes and keep them out until ready-to-serve.   Grilled vegetables. For this meal, I cut big circles (1″ thick) of a couple of vidalia onions and asparagus. I put 2 tbsp of…

Quick Chicken Pot Pie Recipe

0

With the holidays coming up, the season of eating is upon us. I personally love all of the cooking and eating that goes on but there is always so many leftovers! Between the turkey, the roasted brussell sprouts and vegetables, buttered green beans — there is just so much food. Most of the time, eating the same thing over and over again means that no one eats the leftovers (at least in my family). So Campbell’s has something to help — whether you’re using leftovers or not — their new Campbell’s Soups for Easy Cooking helps take cooking (and eating!) up a…

Marinated Chicken Breast Recipe Using Wishbone Italian Dressing

0

This is one of those tried-and-true recipes that my mom made for me and my brother when we were younger. She worked full-time and rushed to get dinner made. This is one of those easy recipes where an older child (who knows how to handle raw meat, can step in), so when I came home from school, I’d do my homework, then follow whatever directions my mom had for me to make dinner. For this marinated chicken breast recipe, all I would have to do is put the chicken into a casserole dish and pour some Wishbone Italian Dressing on top…

Ragu Celebrates National Pasta Day with Easy Mealtime Recipes

0

Did you know that National Pasta Day is October 17th? Who knew?  I mean, seriously, every day is National Pasta Day in my family. It’s easy and quick and you know that your kids are going to love it. For this year’s National Pasta Day, I was invited by Ragu® for a hands-on cooking event where we got to see a demo by Ragu’s Chef Joanne and then was able to put our knowledge to the test by making our very own dishes. We got our hands on some fresh herbs, vegetables, meats and produce and of course, Ragu sauce. We were…

Recipe: Pasta with Bacon and Leeks

2

Last month, I received the Bacon Issue of The Food Network Magazine. I try to eat healthy, but there are just some things that you can’t get away from. Bacon is one of them. This Pasta with Bacon and Leeks recipe is easy and quick, and something that the whole family will love. First, I cook the bacon using the easiest method I know. I use about half the strips for this recipe and reserve the rest for BLT sandwiches for lunch!  Leeks are just gorgeous and my husband and I eat them. My girls, however, aren’t too big with big green things in…

Roasted Vegetable and Steak Salad by the Food Network Magazine

0

The weather is (hopefully) turning, which means  warm weather is coming, which means we’re all wanting to lose those lingering 5 pounds. (Why does it always seem to be five FIVE pounds?!) Anyway, I just got The Food Network’s Bacon Issue, which I definitely perused but had to put down. Instead, I rounded up their 2012 “Light Issue” and found their Roasted Vegetable and Steak Salad, which looked pretty simple to make and takes only about 30 minutes. First, you start with some beautiful, crisp trimmed green beans. Which, when tossed with red onions and some olive oil and whole…

Easy Pan-Roasted Chicken with Potatoes and Green Beans Recipe {Real Simple}

0

On Sundays, I like to make a home made dinner, something that my full-time working mom was able to do almost every night of the week, but I try for Sundays (well, and maybe a couple other days during the week, too). I have a bunch of pins on my “Main Entrees” Pinterest Board, but this is the pin that I go to all. the. time. It’s Real Simple magazine’s Pan-Roasted Chicken With Lemon-Garlic Green Beans and Potatoes. It is so easy and uses very few and fresh ingredients that you probably already have in your kitchen. You start with some lemons,…

Easy Weeknight Meal: Slow Cooker BBQ Brisket Recipe (from Food Network Mag)

2

I was not compensated for this post in any way. All opinions expressed are mine. Now that I am home a bit more (I still work out of home, but I have a bit more flexibility), I want to be able to serve home-cooked meals to the family. Of course, me being at home to actually cook a home-cooked meal is tough since I am shuttling the kids from one after-school activity to another. So, when we are going to be home for dinner, I like to use my slow-cooker which is a hand-me-down from my mom. It’s about 25…

Dinner Party Menu: Spanish Supper (from Food Network Magazine)

1

I was not compensated in any way for this post. All opinions expressed are mine. Or of my guests.  We are trying to get back into entertaining and having friends over for an intimate dinner party—with kids. The Hubby and I take turns inviting friends over. He’s in charge of the wine and beer and I’m in charge of the dinner party menu. Last weekend, friends of ours and their two boys trekked over from Brooklyn for some good food and laughs. Below is the dinner party menu that I (thankfully) came from the September Issue of Food Network Magazine.…

Easiest Way to Make Bacon

14

I’ve been cooking bacon for a long time.  And I’ve always cooked bacon in a skillet with a bunch of bacon slices crowded in a circular pan, while standing over the stove making sure that it doesn’t burn. Several years ago, I watched one of my favorite cooking shoes on the Food Network, Ina Garten’s Barefoot Contessa, and she showed the easiest way to cook bacon —and it was SO easy, I couldn’t believe I didn’t think of it. And Ina didn’t show how to cook bacon, but really, how to Roast Bacon. I have taken liberties from her original recipe…

Baked French Toast with Udi’s Gluten-Free Bread

12

On the weekends, I try to make a good old-fashioned breakfast, the kind that my mom used to make with eggs, french toast, bacon, toast – everything. I like having the weekend mornings nice, slow, relaxed and family focused and it’s always better when there’s good food involved. Since our older daughter is on a low-gluten diet, I jiggered Paula Deen’s Baked French Toast with Maple Syrup to include Udi’s Gluten-Free White Sandwich Bread. So below is Paula Deen’s recipe, with my editorial comments and tips in *asterisks and italics. Ingredients 1 loaf French bread (13 to 16 ounces) *We…

Perfect for Brunch: Giada De Laurentiis Baked Egg and Turkey Sausage

2

Since we went on holiday for Christmas break, we celebrated Christmas with my parents after New Year’s eve – about three weeks after the fact. I wanted a hearty, savory, and easy-to-make brunch meal for all of us. On a random afternoon that I was home early and with no kids in tow, I was watching the Food Network channel and Giada De Laurentiis was on. She was making this Italian Sausage and Egg Bake recipe with spinach, sun dried tomatoes, homemade croutons and eggs. It looked so easy that I knew that I was going to make it for…
