A friend of mine several months ago showed me a new magazine that had just come out:  the Food Network Magazine.  It is a FABULOUS magazine that is so great and easy to use – especially for the working mommy!  I had just started subscribing this past summer, so I have been in for 3 issues thus far, and have tried a  handful of recipes from each of the issues – with amazing results! Since we’ve had our two girls, the thought of having a civilized “dinner party” was never part of our weekend repertoire.  First off, dinner is usually held at the early-bird special time of 5:00 p.m., and usually consists of Chicken Fingers, Annie’s Stars, Mac & Cheese or anything of that ilk.  Now that the girls have “grown up”, we’ve decided to bring back the civilized dinner party back — at least to our apartment.  Every month, we’d invite a couple of our friends: one month, my friends; the next month, his friends. “Almost Lasagna” Recipe is a HIT!

The “Almost Lasagna” was a hit.  The Hubby has eaten it a handful of times this week for dinner, I had it for lunch today and the kids had it for dinner/lunch at various times during the week.  The marinated chicken was just as moist this evening over a salad.  Healthy I must admit, although, my stomach is already starting to growl. We have maybe one more meal out of the “Almost Lasagna” and then we’re done.  What else to do? Any good, easy recipes that could last for a handful of days and could serve for multiple meals?  …
