Whole Food’s Shrimp Fajita’s Dinner Kit

I love anything that is packed up and ready to be cooked. It makes my life easier and I get to try new recipes that I normally would never think to cook. That’s why I love Whole Food’s “Health Starts Here” Dinner Kits. They stock a handful of varities every week, but since we are trying to eat healthier, and incorporating more seafood into our diets, I decided to try out their Shrimp Fajita’s Dinner Kit which cost about $17.

As you can see from the package, it comes with the shrimp already peeled and deveined (yippee!), bell peppers and onions. What I love is that the package tells you what you’ll also need: chili powder or fajita seasoning, black pepper, 1/2 cup vegetable broth, chopped cilantro, whole wheat tortillas, guacamole, salsa and lime wedges. Makes grocery shopping SO easy!

Now, all you do is follow the directions on the package:  Toss the shrimp and the chili/fajita powder in a skillet on medium high heat for about 2-3 minutes. Remove and set the shrimp aside on a separate plate.

Add the bell peppers and onions to the pan and saute for 5 minutes. Starting to look real good, doesn’t it?

Add the broth first and scrape up any of the yummy bits on the pan with a wooden spoon. Add the shrimp back in and cook until the broth has evaporated.

Serve with your favorite fixings!  We love sour cream, salsa and guacamole.
