Summertime is so perfect for easy cooking. This is one of my favorite side dish recipes. It comes from one of my best oldest friend, Faye: she is an AMAZING cook. Not only is the recipe super quick and easy (you can even enlist the help of the kiddies), but it goes with everything, especially a summertime BBQ!
Prep Time: 5 minutes. Cooking Time: 10 minutes
Ingredients:
1 bunch asparagus
Drizzle of good olive oil
Salt and Pepper
Juice of 1 lemon
Wedge of fresh parmesan cheese
Directions:
Preheat the oven to 400 degrees. Snap of the ends of the asparagus (this is where the little kiddies can help!) and place them on the baking sheet. Drizzle olive oil on the asparagus and give the baking sheet a little shake to make sure the asparagus is covered in the olive oil. Sprinkle with salt and freshly ground pepper. Roast in the oven for 10 minutes (check on them often and give the pan a little shake). The asparagus is ready when they are a little toasty brown. Place on a platter and squeeze out the juice of a lemon over the asparagus (more or less depending on your preference). Grate some fresh parmesan cheese over the asparagus. Enjoy!
